Mardi Gras

We may not be in New Orleans but we sure had fun at our Mardi Gras party. We wore masks that we made earlier in the week, some of which were quite elaborate. We started the event with Cajun music, drinks and appetizers. The colorful decorations added a special feel to the evening. The Cajun style dinner was very enjoyable. We had several entrees to pick from and I enjoyed the Shrimp Etouffee. I was not disappointed. Sorry you missed it! P.S. It is a good thing the Terrace is expanding their fitness room as I need to work off these extra calories. Tell you more later.

Be My Valentine

We sure had some fun and worthwhile Valentine’s celebrations. We started celebrating Valentine’s Day on Friday with a special fund raising luncheon. Our local Meals on Wheels had a fund raiser and approximately 50 of us purchased a meal with the proceeds going to help support Meals on Wheels in Columbia. Also on Friday, Laura Mae, our activities director hand dipped strawberries and we were able to purchase those to give to friends and family. The proceeds from the strawberries went to help earthquake victims in Haiti. Friday evening we had some cute entertainment. Some children came and sang for us and then passed out Valentine cards to us. How great! Then on Valentine’s Day we had a special dinner. The dining room was so pretty with fresh roses and heart shaped balloons. We had an exceptional menu with our choice of Salmon Wellington or Carved Tenderloin of Beef. My favorite dessert was the Chocolate Trio. If you’re a chocolate lover you too would have loved this. It included a chocolate dipped strawberry, chocolate truffle and chocolate diablo. In just a couple days we will have a Mardi Gras party. I am looking forward to it.

Caribbean Cruise Night

Friday night we had a blast at the social hour and Caribbean Cruise Night. We all dressed up in our cruise wear and enjoyed the exuberance of the beach music.

The evening began with a social hour where we enjoyed beverages and appetizers of Jerked Pork Rib Tips and Coconut Shrimp with a great tasting tamarind ginger sauce. The buffet was beautiful and delicious. We had so many choices!

The salads were Caribbean Citrus Spinach Salad or a fresh fruit salad. Then for the entrees - baked fish Cuban Style, Jerked Chicken and a Cuban Pork with Pineapple. All these choices and not room enough on my plate. I’m not finished.

We also had Coconut Crusted Citrus Sweet Potato and Caribbean Beans and Rice. I can’t forget the desserts: Flan and oh my goodness Coconut Rum Cake. What fun we had and oh am I full. Wish you could have been here!
